Shiitake Bacon Avocado Toast

This avocado toast is not only a delicious and satisfying meal but also incorporates ingredients that can support hormonal balance and overall wellness. Avocados are rich in healthy fats and fiber, which can help regulate blood sugar levels—a crucial factor for us with PCOS. Shiitake mushrooms are known for their anti-inflammatory properties and, when paired with bacon, create a flavorful topping that makes this dish irresistible. Ingredients

  • Avocado Mash

    • 2 slices sourdough

    • 1 medium hass avocado


    • juice of a lime

    • 1/4 tsp red pepper flakes


    • salt and pepper, to taste


  • Shiitake Bacon topping

    • 6 shiitake mushrooms, sliced


    • 4 strips bacon, cut into lardons


    • 1/2 tsp agave

    • dash of cayenne


    • fresh cracked pepper,


    • microgreens, garnish (optional)




Preparation

Step 1

In a cold saucepan, place your bacon lardons over medium heat. You're going to want to render out the fast from the bacon, with this size, it should only take about five to seven minutes.


Step 2

In a separate pan, or using your toaster, make sure to toast your sourdough until it is golden brown. When I toast in a pan, I like to use olive oil for both added flavor and it gets extra golden brown.


Step 3

While you let those two things cook, grab a small bowl and place all of the avocado mash ingredients and use a fork to make sure everything is fully mixed together. The key is use avocados that are very ripe otherwise, you won't get the consistency we're looking for.


Step 4

Once the bacon is crisped and cooked to your liking (I like it a little charred for this recipe) then you're going to remove it from the pan and place it on some paper towel so that it soaks up the excess grease.


Step 5

Using the same pan you just cooked the bacon in, place your mushrooms and allow them to sautee until soft. Season with black pepper and cayenne. Once the mushrooms have been cooked down, you will add the bacon back in and add the agave. No salt needed here because the bacon already has salt.


Step 6

The last step is to build the avocado toast! First place the sourdough onto your serving dish, then spread the avocado mash onto the toast. Lastly, place the mushroom topping and garnish with microgreens.


Step 7

Enjoy with an iced matcha latte!
